Why am I so excited?

I am excited because I am a huge fan of Tyler The Creator and ice cream. Being a true Foodie, you know when I heard that Jeni’s Ice Cream was doing a collaboration with one of my favorite artist, I was here for it. Plus, it’s the Summer time and you know I got to get mines.

 

What’s in the Snowflake Pack?

Snowflake Pack is a collaboration with Jeni’s Ice Cream and Tyler The Creator (Jeni’s X Golf Le Fleur) . All pint ice creams are some of Tyler’s favorites. The flavors in this pack are, Snowflake, Cream Puff and Gooey Butter Cake. It also includes a t-shirt from Tyler’s clothing brand Golf and the sizes range from S to XXXL. Lastly, the pack has a Post-IT note from Tyler himself. It is a sketch of the Snowflake pint design with a sweet message from his as well.

I am huge fan of trying new ice cream flavors and after tasting his favorites, I see why. Lets dive into the ingredients of each pint from Jeni’s Ice Cream descriptions.

What are my thoughts?

Let me just say this, I will be going to Jeni’s Ice Cream shop this weekend to reload my freezer. If thats, not enough for you to go get your own Snowflake Pack , or go visit the store, just go look up customers’ tweets and Instagram reactions. They love it. My favorite of course was the Snowflake! This tasty treasure, is so refreshing and honestly no other ice cream came close to how good it tasted. The spearmint had my taste buds so freaking happy. My mother thought she was slick by trying to grab herself a spoon to get a scoop. I gave her a look of, “You got to be kidding me!” I laughed and told her, “Sorry Mom, you got to get your own”.

Pineapple Upside Down -Right Side Up Cupcakes & Vanilla Reese’s Caramel Cupcakes

Pineapple Upside Down/Right Side Up Cupcakes & Vanilla Reese’s Caramel Cupcakes

Prep time: 20 minutes

Cook Time: 45 Minutes

Serves: 20 people 

What You Will Need:

Lets Begin.

Preheat oven at 350 degrees, Spray half of the 12 Cupcake Pan with the Coconut Cooking Spray (6 spots) and add 6 cupcake liners on the other half. In the 6 Cupcake Pan, add a liner in each and in the other pan, add only 2 liners.  Set all pans aside to fill later. 

Combine. Butter Cream, powdered-sugar in mixing bowl. Mix on medium speed for about 30 seconds. Set aside.

Combine. Cake Mix, eggs, oil, water in the mixing bowl and mix on medium speed for about 1 minute. If you don’t have a mixer, thats totally fine, you can mix your ingredients very well  with a rubber spatula  for about 12 stirring motions. Set that aside.

Pour. Mixture into the Batter Dispenser. This verse pouring mixture directly into pan makes everything easy breezy. With the dispenser, it pours out evenly and there is no mess. See imagine below. Now if you don’t have a dispenser, its not the end of the world. You can use your tablespoon to fill the liners with the cake mixture; add about 2 tablespoons. 

Fill. The six liners with batter. Don’t fill it all the way to the top; leave some space. (This will be for the Vanilla Reese’s Caramel Cupcakes.) The spots you sprayed, this is where you will add the cherries and pineapple slices for your Pineapple Upside Down Cupcakes. With your kitchen knife, cut a triangular piece off the eleven pineapple slices and set aside. Place the larger piece at the bottom of the pan, add a Maraschino cherry in the gap then add the cut piece on top. See below. Now add batter on top. For Pineapple Right Side Up Cupcakes, its the opposite. Add batter first then add pineapple and cherry on top. Look at third imagine. The last 6 Cupcake Pan will be for only two cupcakes. Now, that can be for whatever cupcake you choose. I chose to make two Right Side Up Cupcakes.

 

Bake. For 20 to 25 minutes or until wooden toothpick inserted into the center comes out clean. After baking is finished, the top of your cupcakes will have a golden brown crown. Take out of the oven and set it on a tile counter top and let it cool in pan for about 10 minutes. Remove from cupcake pan and let it cool on a flat pan top with a baking sheet about 20 minutes. 

Frost Time BABY! With your rubber spatula, add frosting inside pipping bag. Use any decorating tip you like. I use an open star tip, similar to this (Click to See). For the Vanilla Reese’s Caramel Cupcakes, frost it in a circular motions and built to the top. Watch video below. 

 

Top. The Pineapple Cupcakes with your Mother’s Maid Cherries. You can also add whipped cream for the extra sweetness and some butter cream frosting. 

 

Top. Each Vanilla Cupcake with a Reese Cup then drizzle caramel sauce on top. You can also add chocolate drizzle on top!

Vanilla French Toast

Vanilla French Toast

Prep time: 8 minutes

Cook Time: 15 Minutes

Serves: 1 to 2 people ( I just eat the whole thing by myself lol )

What You Will Need:

  • 1 Medium Banana (Sliced)🍌
  • 3 Large Eggs 🥚🥚 🥚
  • 1/2 Cup of Powdered Sugar 
  • 1/2 Cup of Coconut Milk🌴🥛 Or Whole Milk or Almond Milk 🥛
  • 4 Tablespoons of Grounded Cinnamon 
  • 2 Tablespoons of Vanilla Extract 🌿
  • 1/3 Cup of French Vanilla Creamer 🥛
  • 4 Sliced Strawberries 🍓 🍓 🍓 🍓 
  • 4 Slices of Thick Wheat Bread 🍞
  • 1 Whisk 
  • 1 Mesh Strainer Steel Stainer 
  • 1 Nonstick Pan or Skillet
  • 1 Large Mixing Bowl
  • 2 Small Custard Size Bowls
  • Tablespoon🥄
  • Teaspoon 🥄
  • 1/2 Stick of Butter or Coconut Cooking Spray (Non Stick)  or Any type of Butter Cooking Spray 🌴
  • Maple Syrup 

Topping Optionals: 

  • Whipped Cream
  • Caramel Sauce
  • Chocolate Sauce
  • Blueberries

 

Lets Begin.

Combine. All ingredients in the large mixing bowl mix with your tablespoon. Mix very well to combine all ingredients for about 10 stirring motions. Set that aside.

 

Melt. Some butter in the non stick pan or skillet over medium high heat 

Place. Each slice of bread, one by one into the mixture, allowing the bread to soak some of it. Shake off the excess off.

Fry. The French Toast for about 2 minutes on each side or until golden brown. Now if you live in a house full of hungry people, be prepared when your family start begging to have a bite or two lol.

Plate.  Your French toast and add the sliced strawberries and bananas. Pour your powdered sugar into the Mesh Strainer and  gently over your French toast.

Drizzle. The Maple Syrup over your French Toast and ENJOY!

Get A Bit Fancier (Optional): Add whipped cream on the side. Or Caramel Sauce. Or Chocolate Sauce. Or Blueberries. Or ALL OF THE ABOVE!

Homemade Banana Bread

Homemade Banana Bread with Coconut Milk

(Makes 12 standard size muffins or 8 1/2 X 4 1/2 inch loaf/bread)

Prep Time: 10 minutes

Cook Time: 45 to 50 minutes

What You Will Need:

  • 4 Medium very ripped Banana🍌
  • 1/3 Cup of Water💧
  • 2 Large Eggs 🥚🥚
  • 1 1/2 Cups of all-purpose flour🎍
  • 1 Tablespoon of Sour Cream
  • Pinch of salt
  • 1/2 Cup of Coconut Milk🌴🥛
  • 1/2 Cup of Splenda Sugar
  • 2 Tablespoon of Vanilla Extract 🌿
  • 8 1/2 X 4 1/2 inch loaf pan🍞
  • 1 Teaspoon of Baking Soda
  • 1/3 Cup of Mazola Corn Oil 🌽
  • Rubber Spatula or Hand Mixer
  • 1 Large Mixing Bowl
  • 1 Medium Bowl
  • Fork
  • Tablespoon🥄
  • Teaspoon 🥄
  • Coconut Cooking Spray (Non Stick) 🌴

Let’s Begin.

Preheat oven at 350 degrees, Spray your loaf pan with the Coconut Cooking Spray and set aside. In your medium bowl, add your peeled ripped bananas and smash it with your fork.

Combine. All ingredients in the large mixing bowl and mix with the rubber spatula. Stir for about 45 to 55 strokes ( 30 seconds with Hand Mixer at medium speed, scrape down sides with rubber spatula and mix again for additional 30 seconds) until it forms into a batter.

Pour. Batter into the loaf pan. Now, if you want to get creative, you can slice some ripped banana in any shape you want and add them on top or you can just stick to something simple and don’t add them at all. Call me old fashion lol.

Bake. For 55 to 60 minutes or until wooden toothpick inserted into the center comes out clean. During the baking process, your house with smell amazing and after baking is finished, the top of your loaf will have a golden brown crown. Take out of the oven and set it on a tile counter top and let it cool in pan for about 10 to 20 minutes. Remove from pan and let it cool on a wire cooling rack for about 1 hour. If you get super hungry, like me and want to eat it sooner, you can let it sit for like 40 minutes lol. Slice about an inch thick and serve. Enjoy!!

 

Banana Chocolate Chip Pancakes

Banana Chocolate Chip Pancakes

What You Will Need. (Makes 7 mini Pancakes) 

Prep Time: 15- 20 minutes

  • 1 large Banana🍌
  • 1 cup of Water💧
  • 1 cup of Nestle Chocolate Chips🍫
  • 1 cup of Pancake Mix 🥞
  • 1/2 of Maple Syrup
  • 1 Tablespoon of Vanilla Extract 🌿
  • 1 Tablespoon of Cinnamon Sugar
  • Non stick pan
  • Rubber Spatula
  • 1 Large Mix Bowl
  • 1 Medium Bowl
  • Fork
  • Tablespoon🥄
  • Nuetella 🍫
  • Chocolate Cheesecake & Hazelnut Spread 🌰
  • Coconut Cooking Spray (Non Stick) 🌴

Let’s Begin. In your medium bowl, add you whole banana and smash it with your fork. Then have your 1/2 cup of chocolate chips and cup of water near by.

Let’s Start Mixing. Add the pancake mix, water, 1/2 a cup chocolate chips, cinnamon sugar, smashed banana in the mixing bowl

Gently mixed everything together with your spatula …….

Let’s Get Cooking. While the mix is resting, get your non-stick pan on the stove on medium heat and spray a graious about of Coconut Spray on the pan. Pour about 2 and half Tablespoons of mix in the pan. If you want to cook one pancake at a time, thats wonderful, but if you get hungry like me and want to make it fast, you can make three mini pancakes at a time. Of course this all depends on how big your non-stick pan is.  Cook on both side for about 2 minutes or so until golden brown.

Let’s Start Adding Layers. Each layer will have Chocolate Cheesecake & Hazelnut spread and chocolate chips on top.

Let’s Stack Them. Stack each layer on top and pour your maple syrup at the end. Enjoy with your favorite Milk and remember don’t share 😁

Very Berry Smoothie Bowl

Simple.Easy & Fun. Summer is still not over! If you are ever looking for something to eat that is refreshing and tasty, try my Tropical Smoothie Bowl recipe below. It’s only takes about 10 minutes or less to prepare.

What you will need:

Blender

Wide bowl

Teaspoon

Measuring cups

Cup of Coconut Milk

1/2 cup of Coconut Water

1 large Banana (sliced)

Cup of Frozen Blueberries

Cup of Frozen Mixed Berries (Strawberries, Raspberries, Blackberries)

1/4 cup of Whole Almonds

1/4 cup of Cranberries

1 Tablespoon of Honey

1/4 Cup of Cranberries

1/2 cup of Old Fashion Oats

Half a cup of Blueberry Yogurt

1 Cup of Apple Sauce

1/2 cup Chia Seeds 

1/2 cup Trail Mix

Lets Begin.

Prep Time: 8 to 10 Minutes

Ready. Set. Blend.

In a blender combine Coconut Milk, Coconut Water, 1/2  large Banana and Blueberries. Blend. Blend. Grind for 30 seconds. 

Add Mixed Berries (Strawberries, Raspberries, Blackberries), Old Fashion Oats, and Honey. Blend. Blend. Grind for 30 seconds. 

Make sure there are no clumps in the smoothie and if so blend for additional 10 sec.

Next, pour smoothie slowly in the bowl. Leave at least 1 inch from the top of the bowl. Any extra, pour it in a glass cup. Put it in the fridge and Enjoy later.

Designing the Bowl.

When it comes to adding the almonds, cranberries, chia seeds, trail mix, banana slices, you can come up with different intricate patterns. For me, I love making curvy patterns.  Check out the design below…

The Best Eats in Paris

Paris. If you ever want to eat the best foods in Paris on a budget, these are the amazing spots I found  on my trip…….(more places coming soon)

Ice Cream. When you get to the Eiffel Tower there are about four street vendors that serve ice cream. Flavors they have are Pistachio, Vanilla, Chocolate and more.  Since, I love trying something new, I had to get Pistachio. Not only does it capture well on camera, it was very refreshing on a hot day!
